Le vinaigre balsamique

Pour inaugurer la rubrique produits, nous nous sommes rendus au restaurant La Trattoria, à Bourg-en-Bresse, où nous nous sommes entretenus avec Piero d’Agostino.
Ce fin connaisseur de la cuisine italienne, son pays natal, dont il révèle les saveurs aux burgiens tous les midis dans sa trattoria du centre-ville, a tenu à nous faire partager les secrets du vinaigre balsamique. Un produit d’exception, qui trouve son berceau dans la région de Modène. Une crème plus qu’un condiment, a-t-on envie d’écrire. Un produit très éloigné, mais alors très-très éloigné des vinaigres insipides au goût de caramel artificiel dont on se sert habituellement pour conférer une touche italianisante à nos entrées tomates-mozza.
