Vous reprendrez bien un peu de soupe ? En ces temps de froidure hivernale, la question ne se pose presque pas, tant ce plat fort ancien semble s’accommoder à merveille des frimas de l’hiver. Vous avez dit soupe ? Mais êtes-vous bien sûr d’utiliser le terme le plus approprié pour désigner le contenu de votre assiette ?
Autrement dit : êtes-vous capable, d’un coup de cuillère, de distinguer sans risque de vous tromper une soupe, un potage, une crème, un velouté, un consommé ou un bouillon ? Pas si sûr ? Alors lisez attentivement ce qui suit.
A en croire des sources bien informées, la soupe ne serait autre qu’un potage (ou un bouillon) que l’on épaissit en y introduisant une tranche de pain. Le Petit Robert prend même les choses à rebrousse-poil, puisque selon lui, la soupe, dans un sens un peu vieilli, désignerait “une tranche de pain que l’on arrose de bouillon, de lait”.
Potage ou bouillon, donc. En poursuivant l’enquête, on trouve ainsi que le potage n’est autre qu’un… bouillon, préparé à partir de viandes, de légumes, de farineux. Quant au bouillon, Le Petit Larousse de préciser qu’il s’agit d’un potage clair obtenu en faisant bouillir dans l’eau de la viande, des légumes. Soit dit en passant, boire le bouillon se dit aussi d’un échec, souvent financier, précise le même Petit Larousse.
Jusqu’ici, vous suivez ?
Venons-en maintenant au consommé. Selon Le Petit Larousse toujours, il s’agirait d’un “bouillon de viande”. Perplexité ! N’était-ce pas aussi la définition que le même Petit Larousse donnait du bouillon ? Avec le poisson, au moins, les choses semblent moins compliquées : la bisque, en effet, est le mot juste pour désigner un potage fait d’un coulis de crustacés (bisque d’écrevisses, de homards). Quant au velouté, il ne s’agirait de rien de plus que d’un potage onctueux, lié à la crème et aux jaunes d’œufs.
Allez, ça suffit comme ça ! Gardons-nous d’évoquer le gaspacho avant le printemps. Vous avez la tête dans le potage, dites-vous !?
